The Priory Market is Dublin’s first fully indoor food and beverage market — a lively new destination at the heart of Tallaght Village combining food, drink, culture, and community under one roof. Opened in June 2025 following a €4 million investment, the market brings together sixteen independent food and drink areas, on-site brewing by Priory Brewing, and Priory Coffee Roasters, alongside The Apex, a dedicated theatre and events space.
Housed in a distinctive structure the building originally housed the first microchip manufacturing location in Ireland, and was purchased by Partas in 1999. The current building blends contemporary industrial materials with warm, monastic touches, The Priory Market takes inspiration from nearby St Maelruain’s Priory. Within, natural light, reclaimed doors, and stained-glass accents create an inviting civic atmosphere. The design supports small enterprises and start-up kitchens, many led by migrant entrepreneurs, who operate on a shared turnover model rather than traditional rent.
The project, led by Partas and entrepreneur John Kearns, is positioned as a social enterprise that reinvests profits locally and supports sustainable job creation — estimated at over 130 positions. Serving as both marketplace and meeting place, The Priory Market is a vibrant example of adaptive reuse and local innovation, establishing Tallaght as a destination for food, culture, and inclusive enterprise.
